Description
Certified organic coconut flower nectar is naturally sweet and highly nutritious. Our coconut nectar comes from the coconut trees, derived from the liquid sap of the coconut flowers. This organic coconut product has a very low glycemic index (35) and contains vitamins, minerals, amino acids and a range of other nutrients.
When collected from the blossoms, natural coconut flower sap contains 1.5% fructose. As the water is removed from the sap, the fructose content of the final liquid reaches only about 10%. When compared to other sweeteners, such as honey, sugar or agave, this makes coconut nectar a low fructose option. As coconut nectar is a sucrose-based sweetener, it may be a healthy alternative for people with fructose sensitivities.
Sustainability
Traditionally, the coconut nectar (and coconut sugar) is used in Thai cuisine as a sweetener.
The coconut nectar farm is separate from other farms producing coconut products and make up a very small percentage of farming in Thailand. The coconut farmers that produce the nectar do not expect to sell the coconut for the oil or the water. It is a choice made by the farmer to produce the nectar and sugar from the young, or the mature coconut.
The terms “coconut sugar, and coconut palm sugar” can be used interchangeably.
Uses
Coconut flower nectar can be used as a natural sweetener in tea, coffee, baking, or (our personal favorite), as a syrup over pancakes, toast or ice cream. It is commonly used in preparing raw food desserts, in smoothies and in juices. It works in any recipe as a replacement to honey, agave syrup, maple syrup or sugar.
